LPG teams up with Cutri Fruit

Two of Australia’s most respected fresh produce companies have joined together to create their new exporting joint venture, ‘LPG Cutri Fruit Global Exports’.

La Manna Premier Group (LPG) is one of Australia’s leading fresh produce supply chain companies. The Group’s farm production capacity spans all Australian states and includes open field growing as well as protected cropping. LPG has ripening and distribution centres in all major cities as well as Australia’s largest central market footprint.

Cutri Fruit is Australia’s largest grower packer of fresh stone fruit and has recently expanded its operations into the production of avocados. It has been exporting for over thirty years and has until recently had its own in-house exporting business, Certified Fresh.

Through the joint venture, ‘LPG Cutri Fruit Global Exports’ will handle all of Cutri Fruit’s exports exclusively and will also export the full array of products that LPG has been marketing for many years.

Both businesses are at the forefront of the Australian fresh produce industry and have long lineages of generation-rich horticultural knowledge. The joint venture will use the expertise in both businesses to supply buyers with the best Australian produce for 12 months of the year. LPG International Sales Manager, Frank Frappa, who is the key point of contact for the new venture says:

“LPG is so excited to be part of this new exporting joint venture. I’ve had a strong working relationship with the Cutri team for over fifteen years and see this as a natural fit. Both businesses love to invest in research and development, funding new frontiers in horticulture to constantly improve growth for our categories and customers.

Gaethan Cutri , CEO of Cutri Fruit, is equally excited about the new venture.

“The Australian stone fruit industry is currently going through its most exciting time of growth and exporting potential. To embark upon such an epic joint venture with LPG seems like the perfect opportunity to allow our exports to continue their upward trajectory into the future,” says Mr Cutri.

LPG Cutri Fruit Global Exports has fresh fruit available now, with some of the tastiest mangoes from its farms in the Northern Territory. The stone fruit season from the Cutri Fruit farms is set to kick off in a few short weeks, with the growing conditions to date being superb, setting the fruit up for another great-tasting season.

White Nectarine Sorbet & Crunch Meringue

As we are now in summertime we thought we would share with you another great use for our tasty White Nectarine for a desert option.

White Nectarine Sorbet with Crunchy Meringue

Ice Cream
4 Larger White Nectarine
1/2 cup of Raspberries (optional)
1 Vanilla Bean
1/4 cup of Sugar
1/4 cup of water
2 Egg Yolks
1 Whole Egg
a few drops of Rose Water
a squeeze of a Lime
Meringue
2 Egg Whites
1/2 cup Castor sugar
1/2 Cup of icing Sugar
1/2 Tsp White Vinegar
1/2 Cup of Yoghurt
1/2 Cup of Mascapone
a few Drops of Rose Water
Drizzle of Honey
Fresh White Nectarine and Berries to decorate

Sorbet

Remove the stone of the Nectarine place in a saucepan over a low heat with Raspberries, Sugar and water, scrape Vanilla Bean add seeds and bean to Nectarines simmer for approximately 30mins or until fruit is completely soft, tender and liquid has reduced to a syrup
Place eggs into electric mixing bowl beat on high heat until light and fluffy
Turn the electric mixer onto a med speed and slowly pour the hot fruit syrup over the egg mixture, this should double in size (be carful not to end up with scrambled eggs) add rose water and lime to taste
Pour mixture into a plastic container and place into the freezer for at least 4 hours. this ice-cream should turn out perfect to scoop with no churner required

Meringue

Beat egg whites on a high speed until soft peaks form.
Gently add the Castor sugar until mixture forms firm peaks and glossy
Add icing sugar and then vinegar gently beat through
spoon mixture onto lined baking tray and bake on 100c oven for 2 hours allow to dry and cool in the oven for 4 hrs
Mix Yoghurt, Mascapone, Rosewater and honey in a bowl
Thinly slice fruit, leaving raspberries whole.

White peach ice-cream

Last week we took some time to meet with chef Tim Holland at Victoria Food & Beverage Trade week who was delighted to turn our first harvest variety Snow Angel (white peach) into a heavenly ice-cream!

Liquid nitrogen vanilla and peach from the Cutri Fruit farm ice cream

Ingredients

1 cup Milk

1cup Heavy cream

3 Egg yolk

100 gm Sugar

2 x peaches peeled and diced 1 Vanilla bean

Liquid nitrogen

Equipment

Mixer

Liquid nitrogen

Note

Treat liquid nitrogen and any object cooled with liquid nitrogen with extreme care and check safe handling practices

Method

Place the cream and milk in a saucepan. Scrape in the vanilla seeds and add the bean, too. Bring to a simmer, then turn off the heat. Place the egg yolks, sugar and vanilla extract in the bowl of an electric mixer. Beat until pale. Add a little of the milk mixture to the eggs and whisk to incorporate, then add the rest of the milk and cook over low heat, stirring, for about five minutes until it is slightly thickened and coats the back of a wooden spoon. After cooking, chill the mixture.

Pour ice cream base and peach into the bowl of a stand mixer with a paddle attachment. Churn on medium speed.

You'll need about 3 times the base volume in liquid nitrogen.

Drizzle liquid nitrogen into the stand mixer. Pouring too fast will result in the formation of large ice crystals, creating an unpleasant icy texture.

Occasionally pause and check that the base is freezing evenly. If it's not, pour the liquid nitrogen more slowly.
